Kind of Like a Cordon Bleu

The few times in my life that I have had Chicken Cordon Bleu, I've loved it. I have no idea how to make it properly but found this chicken recipe for something similar a few years ago. The kids love it! It's chicken breasts stuffed with ham and swiss cheese. Best of all, it's easy to make. There is a little prep time involved but the wait is well worth it. The kids will let you know that it's a big hit!


It All Starts with A Stick of Butter

I didn't say this was a healthy recipe, just a yummy one. We start out by turning the oven to 375 degrees F and melting an entire stick of butter in the baking dish.


Bakeware for Making your Chicken

Make sure you're using the right bakeware. If you do, your chicken will more likely stay nice and juicy instead of drying up. Of course, bakeware doesn't fix bad cooking so make sure that you are following recipes the way they were written unless you know that you can improve on them!

Preparing the Meat

I use boneless, skinless chicken breasts. I clean it all up and then how big I make the chicken rolls depends on how many people are eating. If I have more people, I cut them in half. If there's only a few people eating, I'll use the whole breast and make very large ones.


Pound the Chicken

I usually take a plastic baggy, put it over the chicken and pound it with a meat pounder until it's a thin strip of chicken. The thinner it is, the easier it is to chew through it.


Find the Perfect Cutting Board

I always use a cutting board when I'm pounding the meat. It's flat and sturdy

If you don't have a lot of space in your kitchen, these flexible cutting boards are good because they are easy to store. They're very thin and slide into most cabinets either under things or on the sides.

This is a nice basic cutting board. I love mine like this because it has an indent where the juices can go as I'm pounding the chicken. Otherwise, it's running over the sides and all over the place.
 

Assembling the Chicken Rolls

Once the chicken has been pounded out, I lay it down and put a piece of ham and a slice of swiss cheese on it. Then I roll it up! Use toothpicks to hold the rolled chicken closed.

The Breading

I make the breading using bread crumbs. Sometimes I use seasoned and sometimes I use plain. Whichever you prefer is best. I just pour it into a bowl. Next I add some parmesan, at least a half cup. You can use fresh shredded parmesan for an even better taste. Lastly, I add some garlic powder. I love garlic.

Coating the Chicken

Once the chicken has been filled with the ham and cheese, roll it up and dunk it in the melted butter. Then roll it around in the bowl of the breading mixture. Set them into the baking dish, seam side down. Use toothpicks to hold the chicken closed around the ham and cheese.

Cook the Chicken

The chicken goes in the 375 degree F oven for about an hour. Once it's done, the chicken should be white all the way through and the breading should have browned a little bit. The cheese that has melted out of the chicken will be browned on the bottom along with the crumbs that have come off.

The Finished Product

After cooking them for an hour in a 350 degree F oven, a lot of the cheese will melt into the butter. Scoop it all up and drizzle it over the chicken once it's on your plate. It gives it a delicious flavor.

Chicken Quesadillas

Our next favorite chicken recipe that the kids absolutely love is chicken quesadillas. I like mine full of good stuff but they prefer cheese and chicken only. I usually cut the already cooked chicken up into small pieces and cook it a little bit more with olive oil, black olives, and garlic powder before putting it in the quesadilla. I eat mine with salsa and sour cream.

Barbeque Chicken Dinner

Another favorite meal at my house has always been barbeque chicken, mashed potatoes with brown gravy, and corn. It's a simple meal but all five of my kids loved it! It's also a very easy meal to make. I put the chicken in the baking dish, pour the barbeque sauce on top and put it in the oven at 375 degrees for about 45 minutes to an hour.
